Eat Well with Elissa & Stef: Superfood Smoothie Bowl
These recipes should have you covered for all three meals of the day whilst also making sure that you don’t veer off track if you’re trying to stay healthy. Even though the summer weather may dull our appetite, it is important to still put in what we burn off. These recipes will ensure that your calorie count isn’t crazy, but you’ll still have the energy to work hard and play harder!
Superfood Smoothie Bowl:
Breakfast is often dubbed the ‘most important meal of the day’ and this light and healthy Smoothie bowl is packed with antioxidants and fresh fruits. The perfect cooling and refreshing dish to eat before a workout or on a particularly hot day.
1 cup of frozen berries – strawberries, raspberries and cranberries are good for sweetness
5 cubes of ice
Splash of milk – coconut milk is a tasty and refreshing dairy alternative
1 tablespoon of peanut butter to add thickness
Handful of spinach
Maple Syrup or sweetener of your choice e.g. honey or agave nectar
Toppings of your choice – Blueberries, coconut flakes and granola clusters are some of our favourites
- Place your berries, ice cubes, milk and peanut butter spinach in a NutriBullet or similar blender and blend until smooth. Add extra milk if mixture is not binding together
- Taste using a spoon and add your sweetener of choice if desired, blend again
- Pour out your mixture into a deep bowl
- Top the bowl with your favourite extras – mixing textures is a great way to keep the breakfast interesting e.g. granola clusters add a nice crunch to the smooth texture of the main mixture.
